I love this time of the year when my garden is full of fresh veggies, garlic, fruits and herbs!

Last night I decided to make funky spaghetti, I found it a few years ago doing a google search and it’s a great way to use up fresh cherry tomatoes and basil that has overgrown all of sudden. It’s so easy to make and my family loves it.  Hope you enjoy this easy and yummy recipe.

Funky Spaghetti

Servings: Serves 3–4

Ingredients

1 pound whole wheat spaghetti, linguine or rice pasta

11 to 14 ounces cherry tomatoes, red and yellow

2 handfuls of fresh basil, leaves picked

6 to 8 glugs extra-virgin olive oil

1 clove of garlic (peeled and finely chopped or pressed)

Splash of red wine vinegar

Sea salt and freshly ground black pepper

Directions

Put pasta in large pot of boiling water and cook until al dente. Halve tomatoes, put in bowl and add herbs, olive oil, garlic and vinegar. Season to taste, then scrunch tomatoes until slightly mushed. Drain pasta, and while still steaming, mix with tomatoes.

I also like to change it up and add goat cheese and black olives at the end.
