Chickpea Cookies

By popular demand, here is the chickpea cookie recipe!! They are great post workout or just as a snack!  These healthy cookies can be made with sunflower butter if your kids have allergies or want to take them to school.  You can also substitute regular chocolate chips with vegan friendly. My boot camp ladies love them and my family do too!!

Chickpea Cookies

1 ¼ cups chickpeas, well rinsed and patted dry

2 tsp vanilla extract

½ cup + 2 tablespoons almond butter or natural peanut butter

¼ cup honey

1 tsp baking powder

A pinch of salt if peanut butter doesn’t have any

½ cup chocolate semi sweet chips

Blend all ingredients except chocolate chips in a food processor until it becomes a paste.  Mix in chocolate chips,  scoop approx tablespoon size, leave as a ball or press with fork

Bake at 350ᵒF for 10 minutes, squish them a bit with a fork and bake them for another 6 minutes
